Independence Day
What is Independence Day some may say,
Independence Day honors the birthday of the United States of America and the signing of the Declaration of Independence on July 4, 1776.
This is sure to be a long weekend for alot of people with the 4th of July being on a Friday! Ah, a long weekend break from work for most! Flags flying high and waving in the air to celebrate the 4th!
You will see lots of travelers taking the boat out on the lake, backyard grilling, time spent with family and friends.
hot dogs, hamburgers, grilled steaks, chicken and other goodies! Tomatos are starting to ripen on the vines at some of the Oklahoma farms, can you say YUM!
You see lots of watermelon's and cantelopes, such a refreshing treat in the heat! Picnicing and traveling are very much tradition of this day.
When the daylight goes down most will see a spledid sparkle of lights thorughout the United States Skies as Cities and Individuals set off fireworks of many colors in the night sky!
It is such an amazing thing to behold the fireworks shows, you see the saluting of the flags, and then when the popping and explosions start up many of the little ones scramble to their Mother's and hold their tiny little ears!
Here is wishing you and yours a wonderful and safe 4th of July!

Don't Forget To Smile
by: Julee Mitchelsin
I like to think that I have learned a lot of things from living my life. It seems my years have been filled with a whole lot of good things with a few really hard things in between. I have had the privilege of knowing a lot of really great people and I've enjoyed countless memories with each of them. I have been happily married for quite a few years and I've been blessed with several children. I feel pretty good today, but not every day seems to go this well. Some days life is hard, the people I love the most are annoying, and all I want to do is hide myself in a closet and cry. It is on those days that I remember the advice that my mother often gave me growing up. When I was having a bad day she would say, 'Honey, whatever happens today, don't forget to smile. Nothing is as bad as it seems.'

Why You Need Vitamin A
Vitamin A plays an important role in vision, reproduction, and bone development. It encourages the growth of health surface linings in the eyes, lungs, intestines, and uninary track.
Vitamin A is a fat soluble vitamin. This means that excess amounts are stored in the liver or in fat cells. Because of this you must be careful not to take too much Vitamin A, as it can become toxic.

To Peel or Not to Peel?
by: Gabe Mirkin, M.D.
Vegetable and fruit skins are loaded with fiber and nutrients. You don't want to throw them away unless you have to. Recipes in many cookbooks tell you to peel potatoes, apples, eggplants and everything else, whether you need to or not. Use my "rule of thumb" -- if you can put your thumbnail through the skin, use it! (That eliminates the tough ones like winter squash and the thick ones like banana and orange peels.)

by: Dr. Janet Starr Hull, PhD., CN
The dangers of aspartame are now widely known, but the risks of using Splenda are not as well documented - yet. by: Susan Rutter
Grilling vegetables is easy. The fact that more people don't do it is the strange thing. The general rule is to cut the vegetables into pieces that will cook quickly and evenly. All pieces should be of consistent thickness and no more than about 3/4 to 1 inch thick. Soak vegetables in cold water for about 30 minutes before you grill them to keep them from drying out. Pat dry, then brush lightly with oil to prevent sticking.
